Weekly Meal Plan June 24th-28th
This coming weeks meal plan is on the easy side and using up a lot of what we already have in the house, giving us a lower grocery bill. As you meal plan and work your budget, you'll find this will happen to you too!
Monday's meal, Wontons with Sesame Asian Salad is super easy. I use the Bibigo Chicken Wontons (found in kroger freezer section). These can be microwaved while you throw together the salad. You can do the salad a couple different ways-the easiest is to purchase the salad kit at Kroger or Aldi and just throw together. Since I have been on my weightloss journey I have accrued quite a collection of salad toppings. I have a basket in my pantry devoted to salad toppings and usually grab sliced almonds and crispy wonton strips to use over romaine mix salad. I also dice up some cucumber and green onion to give it that added crunch. I used to use the Panera sesame asian dressing for this, but can no longer find it, so I have switched to Ken's Asian dressing.
Tuesday and Wednesday are pretty straight forward. Thursdays meal sounds fancy, but it is super easy as well! It is just some jasmine rice topped with shrimp that we cook in Kroger brand sweet thai chili sauce. In a separate pan we cook diced peppers and some zucchini and add that to the bowl as well. This bowl has a sweet heat that is really satisfying!
Friday of course is our Make Your Own Pizza and family movie night. We either use Joseph's Lavash or two ingredient dough as our crust and then build from there.
As I am getting into this, I want to begin sharing the pics of the ingredients I use for each meal to make it easier for people to find them in their stores. Weekly meal plan June 3rd-8th
Meal plan for this week! I promise I will get this up sooner for next week! This week for lunch, I plan on making Skinnytaste Asian Chicken Lettuce Wrap salads. I will be making them tonight for the rest of the week, so excited to try this new to me recipe! For breakfast I'm going to have the standard spinach and eggs with proffee!
Weekly Meal plan May 27th-June 1st 2019
I want to begin sharing my weekly meal plan. Although this menu is up a little late, my goal is to get these up by Fridays, so that anyone looking for ideas for their weekly menus have a chance to see them.
The biggest thing I do before I make any grocery list or meal ideas is sit down with my trusty planner and plot out my next week. There are nights I know we won't be eating at home, and nights we may need to eat a quick early dinner to make it to Church on time. I also plot my meal plan according to our budget. We love Aldi, but the one we go to is a little ways away for us, now that school is out and extracurriculars are over, you will probably see me shopping there. Right now, though the bulk is from Kroger, which is less than 5 minutes from our house, or Sam's Club. In the future I will be posting my list of go-to's for each store along with pictures!
To save money, I always look at Kroger's circular. A preview of the sale comes out every Tuesday, but the sale for that circular doesn't begin until Wednesday and runs through the next Tuesday. Other ways we save money: add digital coupons to your Kroger plus card before shopping, typically Monday is meatless-but yesterday was Memorial Day so we had turkey burgers...typically though, meatless. I also buy our chicken breast frozen and in bulk from Sam's. Chicken breast is so versatile, easy to prepare, and a great protein source.
This week, on Tuesday we will be making shredded chicken, which just involves putting 4 frozen chicken breasts in a crock pot with low sodium chicken broth and letting it cook till finished. We then shred it and usually have chicken soft tacos the first night, then use it again another night-in this week's case, shredded chicken loaded sweet potatoes. In the fall I typically make salsa crockpot chicken-literally frozen chicken breast in salsa-with this the first night we use for tacos, then make taco soup with the leftovers!
Wednesdays are usually when we need a quick and easy dinner because we have to run to Church for Praise Team practice and Church. This week we are having Aldi's black bean burger patties. These are super easy to heat up and delicious, dinner will be ready in minutes!
Thursday, as I said above, we will have shredded chicken loaded sweet potatoes. With these I usually add G Hughes sugar free hickory bbq sauce to my chicken then put it on the sweet potato and drizzle with Greek yogurt Ranch dressing. These are so filling and delish!
Fridays are typically always MYOP & Family Movie Night-- Make your own pizza. We make our crusts with either 2 ingredient dough (1/2 cup greek yogurt and 1/2 cup self rising flour), or I use 1 Joseph's Lavash.
Saturdays, if we have nowhere to go we like to take the time to make a recipe together. This saturday it will be Pork Bibimbap. We made this recipe with Hello Fresh a month or so ago and loved it, so we wanted to use the recipe again.
Lunches for this week will be my version of Jimmy John's Unwiches, cottage cheese, walnuts and tortilla chips. Snacks will be fruit, string cheese, or lately shaved ice, as I splurged and bought a shaved ice machine from Amazon along with sugar free syrups.
